- 6 Roma tomatoes - diced
- 1 onion - diced
- 1 jalapeno - minced seeded, pith removed (optional)
- 1 glove garlic - minced
- Juice from 2-3 limes
- Handful of chopped cilantro
- Mix all ingredients together. Refrigerate in an airtight container until ready to serve.
