Today, I decide to meet the neighbors. We have lived in our house since November and I still haven’t made it next door so say hi. I wanted to bring cookies, so I headed over to Pinterest to be inspired. I love salted caramels and immediately wanted to try this. I left the recipe as is, so linked to give proper credit. I was not disappointed.
After I long break, I am committed to blogging again. The last 6 months, we survived Sports Authority bankruptcy, changing jobs, moving to Cleveland, Marsha breaking her neck and having to be placed in a skilled care facility and my mom passing away.
Hanging out last Saturday, flipping through channels, I came across an episode of Brunch at Bobby’s. How did I not know this show existed? He was using one of my favorite ingredients, bacon to make a Cheesy Bacon Twist with puff pastry.
Next morning, I tried to find the recipe with no luck, so I decided to recreate it from memory (which could be a disaster). Turned out great. My husband says must make again. Perfect warm or at room temp and great to reheat.
My mother-in-law loves to go out to lunch and always wants a burger and fries. Now don’t get me wrong, I love a good burger, but I really need her to eat more veggies (we all need to eat more veggies). Bill is out of town and I have a ton of fresh vegetables in the garden, so for lunch we decide to stay in and make Mexican Veggie Fritters.
These are fun, fresh and light. Best thing is you can add what ever vegetables you want, the more the better! The green peppers, jalapeno, tomatoes, dill, coriander all were garden fresh!

My little “peanut” Ellie has developed a bad case of dandruff. Perhaps the chemo drug she is on is causing a skin problem (I will check with the vet next visit!). I have her on a grain free high protein diet, but she could always use some extra calories, so I decided to make her some doggie treats! I used ingredients I had on hand and made it up as I went along…so fingers crossed.
I have several jars of coconut oil on hand (coconut oil is also good for Alzheimer’s patients) and decided to build a recipe around that. I verified that it is safe for dogs
Since she is grain free, I used coconut flour as the base, pumpkin puree, a little peanut butter, flax seed (good source of Omega-3) and the coconut oil.
I did have to hide them…I found not only does Ellie love them, my mother-in-law does as well.
Hints: the dough is soft..I pressed it onto parchment paper about a 1/4″ thick before cutting. I also pressed into mini muffin tins, if you do this just line the bottom or they don’t get crisp enough.
Mix all ingredients together in a medium bowl, use hands to thoroughly mix together. Hand press on to parchment paper to about ¼" thick. Use cookie cutters to get desired shape and place on ungreased cookie sheet. Bake 300° for 40 min or until crisp.
